Ingredients:
1/2 eachBell peppers, chopped
1/2 cupOnions, chopped
4 ozMushrooms, pieces
1 tbspSherry
8 ozCheese, Jack, shredded
Procedures:
1Chop bell pepper and slice mushrooms, then saute until limp; add mushrooms and sherry.
2Cook until all liquid is evaporated.
3Add jack cheese and microwave about 2 minutes.
4Stir and zap 1 minute more.
5Serve with flour tortillas.
6Sylvia"s comments: i didn"t want to dirty a sauteeing pan and a microwave pan, so i just melted the cheese in the frying pan on low.
