Ingredients:
| 1
| lbs | Celery | | 4
| oz | Onion | | 4
| oz | Dried apricots | | 1 1/2
| tsp | Vegetable oil | | 1 1/2
| pint | Vegetable stock | | 1/2
| tsp | Salt | | | Pepper, to taste |

Procedures:
| 1 | Trim the celry, wash & thinly slice. | | 2 | Peel & finely chop the onion. | | 3 | Finely chop the apricots. | | 4 | Heat oil. | | 5 | Add celery & onion, cover & saute, without browning, for 10 minutes. | | 6 | Shake the pan occasionally to prevent sticking. | | 7 | Add apricots, stock & seasonings. | | 8 | Bring to a boil, cover & simmer for 45 minutes. | | 9 | Allow to cool slightly before blending in a blender. | | 10 | Return to a pan & reheat. | | 11 | Serve hot. | | 12 | Elizabeth brand, "vegetables |
