Celery & apricot soup

Ingredients:
1 lbsCelery
4 ozOnion
4 ozDried apricots
1 1/2 tspVegetable oil
1 1/2 pintVegetable stock
1/2 tspSalt
Pepper, to taste
Procedures:
1Trim the celry, wash & thinly slice.
2Peel & finely chop the onion.
3Finely chop the apricots.
4Heat oil.
5Add celery & onion, cover & saute, without browning, for 10 minutes.
6Shake the pan occasionally to prevent sticking.
7Add apricots, stock & seasonings.
8Bring to a boil, cover & simmer for 45 minutes.
9Allow to cool slightly before blending in a blender.
10Return to a pan & reheat.
11Serve hot.
