Ingredients:
| 1
| tsp | Vegetable oil | | 1
| lbs | Carrots, sliced | | 6
| oz | Onion, chopped | | 2
| med | Oranges, grated & squeezed | | 1 1/2
| pint | Vegetable stock | | 2
| tbsp | Cilantro, chopped | | 1
| tsp | Salt | | | Pepper, to taste |

Procedures:
| 1 | Heat oil in a soup pot. | | 2 | Add the carrot & onion. | | 3 | Cover & saute for 10 minutes, without browning. | | 4 | Shake the pot occasionally. | | 5 | Add the orange zest & orange juice, stock, cilantro & the rest of the seasonings. | | 6 | Bring to a boil, cover & simmer for 45 minutes. | | 7 | Set aside to cool slightly. | | 8 | Pour soup into a blender & puree until smooth. | | 9 | Return to pan & re-heat. | | 10 | Serve hot. | | 11 | Elizabeth brand, "vegetables |
