Carrot, orange & cilantro soup

Ingredients:
1 tspVegetable oil
1 lbsCarrots, sliced
6 ozOnion, chopped
2 medOranges, grated & squeezed
1 1/2 pintVegetable stock
2 tbspCilantro, chopped
1 tspSalt
Pepper, to taste
Procedures:
1Heat oil in a soup pot.
2Add the carrot & onion.
3Cover & saute for 10 minutes, without browning.
4Shake the pot occasionally.
5Add the orange zest & orange juice, stock, cilantro & the rest of the seasonings.
6Bring to a boil, cover & simmer for 45 minutes.
7Set aside to cool slightly.
8Pour soup into a blender & puree until smooth.
9Return to pan & re-heat.
10Serve hot.
