Ingredients:
2 lbsLean pork
Salt and pepper to taste
A dusting of pasilla pepper
-ground
Procedures:
1Cut the pork into 1" cubes.
2Dust with salt, pepper, and pasilla pepper, and let rest for 1 hour.
3Place the meat in a shallow baking pan in a 300°F oven for about 2 hours.
4Pour or siphon off the fat from time to time.
5Drain on paper towels and serve with salsa cruda and/or guacamole.
6Makes 25 to 30 carnitas.
