Ingredients:
7 ozCamembert cheese, rind
-removed
4 ozCream cheese, cut into
-chunks, room temp.
1 tbspFresh lime juice
2 tbspFinely chopped toasted
-walnuts
Additional finely chopped
-walnuts
Procedures:
1Blend camembert in processor until smooth.
2Gradually add cream cheese, processing until smooth after each addition.
3Add lime juice; process until smooth.
4Transfer mixture to bowl.
5Mix in 2 tablespooons nuts.
6Season with salt and pepper.
7Spoon pate into 2-cup bowl.
8Sprinkle with additional nuts.
9(can be made 1 day ahead.
10Cover; chill.
11Bring to room temperature before serving).
12If the camembert is very strong, increase the amount of cream cheese to taste.
13Serve with toasted baguette slices and assorted crudites like endive and red bell pepper strips.
