Ingredients:
2 cupWater
1 1/2 tspLemon Juice
1 eachMd Granny Smith Apple
1 cupMayonnaise
1 cupCelery, Finely Diced
3/4 cupFresh Pineapple, Crushed, OR
8 1/4 ozPineapple, Crushed, Drain Well
2 tspCurry Powder
1/2 tspSalt
1/4 tspBlack Pepper
1/2 cupCashews, Chopped
1/4 cupBlue Cheese, Crumbled, *
Procedures:
1* use gorgonzola cheese if available otherwise any blue-veined cheese will do.
2+++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++ mix the water and lemon juice in a small bowl.
3Slice the granny smith apple and put the slices into the lemon water to soak.
4Set aside.
5Put the mayonnaise into a serving bowl and add the celery, pineapple, curry powder, salt and pepper and blend well.
6Fold in the cashews.
7Remove the apple slices from the lemon water and dice.
8Stir into the mixture and then stir in the gorgonzola cheese, blending well.
9Cover and chill.
10Makes about 2 cups of dip.
11Suggested dippers: pita triangles, bread chunks, radishes, scallions, turnips, bell pepper
