Blue cheese-stuffed shrimp

Ingredients:
6 cupWater
24 Fresh jumbo shrimp, unpeeled
3 ozCream cheese, softened
1 ozBlue cheese, crumbled
1/2 tspPrepared mustard
1 tspGreen onion, finely chopped
3/4 cupParsley, finely chopped
Procedures:
1Bring water to a boil; add shrimp and cook 3 to 5 minutes.
2Drain well; rinse with cold water.
3Chill.
4Peel and devein shrimp.
5Butterfly shrimp, leaving tails intact.
6Combine cream cheese and next 3 ingredients in a bowl.
7Stuff each shrimp with 1 tsp. cheese mixture.
8Roll cut side of shrimp in parsley.
9Cover and chill at least 1 hour
