Black-eyed pea fritters

Ingredients:
1/2 lbsBlack-eyed peas, soaked
4 eachGarlic cloves, crushed
2 tspSalt
1 tspBlack pepper
4 tbspWater
Oil for frying
Lime juice to taste
Procedures:
1When peas have softened, rub off skins, soak an additional 30 minutes.
2Drain & rinse.
3In a food processor, process peas, garlic, salt & pepper.
4Add water while continuing to process.
5Add enough water to get a smooth, thick puree.
6Preheat oven to 250°F.
7In a large skillet, heat 2 to 3 inches oil & fry 1 tb of the batter till its golden brown.
8Repeat till all the batter has been fried in this way.
9Keep in oven to keep hot.
10Serve piping hot, sprinkled with salt & lime juice.
