Ingredients:
| 1
| lbs | Black beans, soaked | | 8
| cup | Water | | 2
| tbsp | Salt | | 1
| cup | Onion, chopped | | 1
| cup | Green pepper, chopped | | 1
| cup | Celery, chopped | | 1
| cup | Carrots, chopped | | 8
| tbsp | Olive oil | | 6
| | Garlic cloves | | 1
| tbsp | Cumin | | 4
| tsp | White vinegar | | 1
| tsp | Soy sauce |

Procedures:
| 1 | Simmer beans in water till soft. | | 2 | Saute onions, pepper, celery & carrots in olive oil til the onions turn golden brown. | | 3 | Add garlic, cumin, vinegar & soy sauce. | | 4 | Cook, stirring for 3 minutes. | | 5 | Drain about ?c water from beans & add it to the saute. | | 6 | Cook over a low heat for 30 minutes. | | 7 | Combine vegetables with beans. | | 8 | Cook for another 30 minutes, adding more water if necessary. | | 9 | Joel rapp, "mother nature"s vegetarian feasts |
