Ingredients:
1 lbsBlack beans, soaked
8 cupWater
2 tbspSalt
1 cupOnion, chopped
1 cupGreen pepper, chopped
1 cupCelery, chopped
1 cupCarrots, chopped
8 tbspOlive oil
6 Garlic cloves
1 tbspCumin
4 tspWhite vinegar
1 tspSoy sauce
Procedures:
1Simmer beans in water till soft.
2Saute onions, pepper, celery & carrots in olive oil til the onions turn golden brown.
3Add garlic, cumin, vinegar & soy sauce.
4Cook, stirring for 3 minutes.
5Drain about ?c water from beans & add it to the saute.
6Cook over a low heat for 30 minutes.
7Combine vegetables with beans.
8Cook for another 30 minutes, adding more water if necessary.
