Ingredients:
1 lbsBlack beans, soaked
1 Bay leaf
1 largeRed onion, chopped
1 largeRed bell pepper, chopped
1 largeYellow bell pepper, chopped
1 bunchFresh parsley, chopped
3 tbspChopped cilantro
3 tspCumin
1/4 cupLemon juice
1/2 tspTabasco
Salt & pepper to taste
Procedures:
1Cook black beans with bay leaf til tender but not cracked open.
2When cooked, drain & cool.
3Remove bay leaf, toss black beans with remaining ingredients & adjust seasonings.
4Transfer to a serving bowl & refrigerate till shortly before serving.
5Serve at room temperature.
