Ingredients:

| lbs | Russet potatoes | | | Olive oil spray | | 1/4
| tsp | Turmeric | | 1/2
| tsp | Cumin | | 1/4
| tsp | Cayenne | | | Salt & pepper |

Procedures:
| 1 | Preheat oven to 400°F. | | 2 | Remove oven racks & spray them with oil. | | 3 | Wash potatoes & slice them lengthwise into sticks ? thick or crosswise into rounds 1/3" thivk. | | 4 | Transfer to a baking pan & spray well with oil. | | 5 | Add seasonings & toss to coat. | | 6 | Place the rounds in a single layer on the oven racks. | | 7 | Place the racks in the centre of the oven. | | 8 | Bake until the potatoes are tender, with a deep, golden-brown crust, about 20 to 25 minutes. | | 9 | Serve piping hot. | | 10 | Yamuna devi, "yamuna"s table |
