Bengali-style oven-fried potatoes

Ingredients:
2 lbsRusset potatoes
Olive oil spray
1/4 tspTurmeric
1/2 tspCumin
1/4 tspCayenne
Salt & pepper
Procedures:
1Preheat oven to 400°F.
2Remove oven racks & spray them with oil.
3Wash potatoes & slice them lengthwise into sticks ? thick or crosswise into rounds 1/3" thivk.
4Transfer to a baking pan & spray well with oil.
5Add seasonings & toss to coat.
6Place the rounds in a single layer on the oven racks.
7Place the racks in the centre of the oven.
8Bake until the potatoes are tender, with a deep, golden-brown crust, about 20 to 25 minutes.
9Serve piping hot.
