Ingredients:
1 1/2 tspFinely chopped garlic
1 tbspWorcestershire sauce
1/2 tspTabasco sauce
1/2 tspDry mustard
1/2 tspSalt
1 cupBeer
4 cupSharp cheddar cheese
(freshly grated)
Procedures:
1In a deep bowl, crush the garlic to a paste with a pestle or the back of a spoon.
2Beat in the worcestershire, tabasco, mustard and salt.
3Next, stir the mixture constantly, pour in the beer in a slow, thin stream.
4After the ingredients are well blended, beat in the cheese, a cupful at a time, and continue to beat until the mixture is smooth.
5Pack the beer cheese tightly into a 2-cup mold or an earthenware crock.
6Cover with a lid or foil and refrigerate for at least 24 hours before serving.
7Note: beer cheese is traditionally served with crisp crackers as a first course or an accompaniment to drinks
