Beef sate with szechuan sauce!

Ingredients:
3/4 lbsNew york or fillet steak
MARINADE
1/2 cupSoy sauce
1 tspChili flakes
1/2 tspTumeric
1 tbspHoney
1/2 tspGround Cumin
SZECHUAN SAUCE
6 tbspButter
1 Green onion, chopped fine
1/4 cupSoy sauce
2 clGarlic, blanched
1 cupBrown veal or Chicken stock
1 tspChili flakes
24 6 INCH SKEWERS
Procedures:
1Soak skewers in cold water and refridgerate for one hour.
2Cut steak into 24 3"long x 1" wide -inch strips, each weighing about ?ounce.
3Skewer each piece on a six inch skewer.
4Refridgerate until needed.
5Prepare the marinade: in a small bowl, combine all the marinade ingredients and pour over the meat, turning to coat all sides.
6Let marinade, unrefrigerated, about 15 minutes.
7Preheat the grill or broiler while the steak is marinating.
8Prepare the sauce: in a small skillet, melt 2 tablespoons butter.
9Add the garlic and green onion and saute over medium-high heat until soft, about 2 minutes.
10Pour in the stock, soy, and chili pepper flakes, and cook 1 or 2 minutes longer.
11Stain into a clean pan and whisk in the remaining 4 tablespoons butter.
12Keep warm.
13Broil skewers of steak until medium rare, about 30 to 40 seconds each side.
14Be careful not to burn skewers
