Ingredients:
2 cupDried beans, soaked
1 eachOnion, chopped
2 eachCarrots, peeled & sliced
1 eachCelery stick, sliced
2 eachTomatoes, chopped
1/2 cupOlive oil
Bay leaves
1 tspSalt
1 pinchPepper
1 tspCumin
3 pintStock
Procedures:
1Cook the soaked beans in fresh water for 10 minutes.
2Drain.
3In a soup pot, heat the oil & gently fry the onion.
4Add the rest of the vegetables & the seasonings.
5Stir well & add the beans.
6Ensure that all the vegetables are covered with oil & pour in the stock.
7Allow to simmer till the beans are cooked & the vegetables are tender.
