Ingredients:

| cup | Dried beans, soaked | | 1
| each | Onion, chopped | | 2
| each | Carrots, peeled & sliced | | 1
| each | Celery stick, sliced | | 2
| each | Tomatoes, chopped | | 1/2
| cup | Olive oil | | | Bay leaves | | 1
| tsp | Salt | | 1
| pinch | Pepper | | 1
| tsp | Cumin | | 3
| pint | Stock |

Procedures:
| 1 | Cook the soaked beans in fresh water for 10 minutes. | | 2 | Drain. | | 3 | In a soup pot, heat the oil & gently fry the onion. | | 4 | Add the rest of the vegetables & the seasonings. | | 5 | Stir well & add the beans. | | 6 | Ensure that all the vegetables are covered with oil & pour in the stock. | | 7 | Allow to simmer till the beans are cooked & the vegetables are tender. | | 8 | Jack santa maria, "greek vegetarian cookery |
