Ingredients:
2 cupAM 7 Bean & Barley
1/4 cupCooking liquid from beans
1 cupMinced fresh parsley
1/2 cupTahini
5 tbspLemon juice
1/4 cupAM Olive Oil
1 Garlic clove (juice from)
1/2 tspCumin
1/2 tspOnion powder
1 dashCayenne pepper, OR...
1/4 tsp-Chili powder
Sea salt (optional)
Sliced black olives
Procedures:
1Puree the cooked beans, using the liquid as needed to make a smooth puree.
2Combine the puree with the remaining ingredients except the olives.
3The mixture should be thick.
4Chill, covered, for at least 1 hour.
5Garnish with olives, if desired and serve as an hor d"euevre with whole wheat bread or crackers.
