Ingredients:
CRUST
3 cupUnbleached flour
1 tspSalt
1 cupUnsalted butter, cut up
1/3 cupWater, ice cold
FILLING
16 ozCIBO Goat Cheese (Basil
-Roasted Walnut)
8 ozRicotta
1/2 cupButter
3 Eggs
1/3 cupUnbleached flour
Salt & pepper to taste
Procedures:
1Cibo cheese is a goat cheese mixed with cream and other flavorings.
2I bought it at an upscale grocery store, in the deli section.
3Make the crust: lightly grease a 9-inch springform pan.
4Process flour, salt and butter just until combined and crumbly in texture.
5Add water, 2 tablespoons at a time.
6Do not overprocess.
7Press evenly into pan, up 1 ?inches at the side.
8Allow to chill while making the filling.
9Make the filling: preheat oven to 375 degrees.
10Combine cibo goat cheese, ricotta, butter, eggs (adding one at a time, processing well after each addition), flour, salt and pepper.
11Pour filling into shell, bake until puffed and brown for 25-30 minutes.
