Baked turkey croquettes

Ingredients:
2 tbspButter
3 tbspFlour
3/4 cupMilk
2 cupTurkey -- chopped
1 Egg yolk -- beaten
1/4 tspSalt
1/4 tspCelery salt
1 Egg
2 tspWater
1/2 cupBread crumbs
1/4 tspGround sage
2 tbspButter -- melted
Procedures:
1Melt 2 tablespoons butter over low heat.
2Add the flour and stir until well blended.
3Cook one minute.
4Slowly add milk and cook, stirring constantly, until boiling.
5Let sauce cool; add chopped turkey, egg yolk, salt and celery salt.
6Form into twelve small cones.
7Mix bread crumbs with ground sage.
8Beat egg in water.
9Roll cones in crumbs.
10Dip each cone in egg and roll again in crumbs.
11Place on greased baking pan and drizzle with melted butter.
12Bake at 350 °F for 40 minutes
