Ingredients:
2 tbspChopped onion
1 tspPressed garlic
1/3 cupDry sherry
3 Egg whites
1 Whole egg
1/4 cupWhole-wheat bread crumbs
3 tbspMinced parsley
1/4 tspDried dill
1/8 tspCayenne pepper
1 cupGrated low-fat mozzarella
Cheese
1/2 cupLow-fat ricotta cheese
10 ozMarinated artichoke hearts
Drained and chopped
Procedures:
1Preheat oven to 350 °F.
2Lightly oil an 8-inch square baking pan.
3In a heavy skillet over medium-high heat, saute onion and garlic in sherry until soft but not browned.
4Lightly beat egg whites until soft peaks form.
5Spoon into a bowl and mix with whole egg, bread crumbs, parsley, dill, cayenne, cheeses, and artichokes.
6Add sauteed onion and garlic.
7Pour into oiled baking pan.
8Bake until set (about 30 minutes).
9Let cool, then cut into about 25 squares.
10Serve warm or cold
