Baked crab quesadillas

Ingredients:
1/3 cupUnsalted butter or margarine
1/4 cupVegetable oil
1/2 cupChopped onion
2 Jalapeno pepper, seeded
And finely chopped
1 clGarlic, minced
1 lbsLump crabmeat, drained
1/4 cupMayonnaise
1 tbspChopped fresh cilantro
1 tspSalt
16 8-inch flour tortillas
1/3 cupShrredded Monterey Jack

Procedures:

3Saute" onions, peppers, and garlic in 2 tbl.
4Reserved butter mixture in a medium saucepan over medium high heat, stirring constanty, until tender.
5Remove from heat.
6Gently stir in crabmeat and next 3 ingredients.
7Place tortillas on baking sheets; brush 1 side of each tortilla, and sprinkle with cheese.
8Fold in half.
9Bake at 475 °F.
10For 4 minutes or until golden.
11Cut each tortilla into thirds.
12Serve warm
