Ingredients:
2/3 lbsFlour tortilla dough
Flour
3 Granny Smith apples
Peeled and sliced
2 tbspLemon juice
1/2 cupBrown sugar
1/2 tspCloves
1/2 tspGround cinnamon
1/2 cupWalnuts, chopped
2 tbspCornstarch dissolved
3 tbspWater
Water
Procedures:
1Use your favorite recipe for flour tortillas, or make dough from the recipe on the tortilla mix package.
2Divide the dough into 4, 2-inch balls.
3Roll each into a 6-inch tortilla.
4Dust with flour, cover with plastic wrap and set aside.
5In a saucepan, place apples with enough water to cover.
6Add lemon juice.
7Cook over high heat until boiling 5 minutes.
8Add sugar, cloves, cinnamon, and walnuts; continue cooking over low heat until slightly thickened.
9Combine cornstarch and water and add to mixture, stirring until thick.
10Remove from heat.
11Lay out tortillas; dust off excess flour.
12Spoon on 2 tablespoons of the apple mixture down the middle of each tortilla.
13Fold one side of the tortilla over the mixture; then fold the remaining side over.
14Fold in the ends and seal by moisting the tortillas with a little water.
15Bake in a preheated, 400 °F oven until lightly browned.
16Remove and sprinkle with cinnamon and sugar.
17Serve with whipped cream (at cafe noche, it is served with tequila sabayon sauce made with tequila, egg yolks, and sugar.
18Note: tortillas and apple mixture may be made ahead several hours or a day before
