Ingredients:

| lbs | Asparagus | | 1
| each | Red bell pepper, roasted | | | -- peeled & cut into strips | | | VINAIGRETTE | | 1/4
| cup | Olive oil | | 2
| tbsp | Lemon juice | | 1
| tsp | Balsamic vinegar | | 1
| tbsp | Dijon | | | Salt & pepper |

Procedures:
| 1 | Wash & bend asparagus discarding the tough ends that break off. | | 2 | Cut diagonally into three-inch pieces. | | 3 | Fill a large pot with water & bring to a rolling boil. | | 4 | Cook asparagus for 2 minutes. | | 5 | Drain & rinse in cold water. | | 6 | Place with pepper strips in a large serving bowl & set aside. | | 7 | Vinaigrette: whisk oil, lemon juice & vinegar in a bowl. | | 8 | Stir in mustard, salt & pepper. | | 9 | Pour over the asparagus & pepper & toss to coat. | | 10 | Serve at room temperature. | | 11 | "vegetarian gourmet" spring, 199 |
