Asparagus salad & lemon-mustard vinaigrette

Ingredients:
2 lbsAsparagus
1 eachRed bell pepper, roasted
-- peeled & cut into strips
VINAIGRETTE
1/4 cupOlive oil
2 tbspLemon juice
1 tspBalsamic vinegar
1 tbspDijon
Salt & pepper
Procedures:
1Wash & bend asparagus discarding the tough ends that break off.
2Cut diagonally into three-inch pieces.
3Fill a large pot with water & bring to a rolling boil.
4Cook asparagus for 2 minutes.
5Drain & rinse in cold water.
6Place with pepper strips in a large serving bowl & set aside.
7Vinaigrette: whisk oil, lemon juice & vinegar in a bowl.
8Stir in mustard, salt & pepper.
9Pour over the asparagus & pepper & toss to coat.
10Serve at room temperature.
