Ingredients:
2 lbsEggplant
1/4 cupOlive oil
1/4 cupOnion, minced
1 tspSugar
1/4 cupScallions, minced
1 tbspLemon juice
1 tspGarlic, minced
Pepper freshly ground
1/4 cupGreen pepper, chopped
1 cupTomatoes, diced
Procedures:
1Preheat the oven to 400 degrees.
2Place the eggplant on a sheet of aluminum foil and bake for 1 hour, or until the eggplant "collapses".
3Let cool.
4Remove the pulp.
5There should be about 3 cups.
6Add the onion, scallions, garlic, green pepper, tomatoes, olive oil, sugar, lemon juice and pepper.
7Serve with toast or crackers
