Ingredients:

6 medArtichokes
1 Lemon, halved crosswise
2 cupConsomme
1 1/2 cupOlive oil
1 cupParsley, chpd
1 tbspGarlic, chpd
Salt and pepper
Procedures:

2Remove tough outer leaves and cut off stems to make flat base.
3Trim off thorny tips using scissors.
4Rub cut edges with lemon halves.

7Remove with slotted spoon and turn upside down to drain.
8When cool, gently spread leaves, remove fibrous chokes from center with spoon.
9Preheat oven 400°F.
10Combine consomme, oil, parsley, garlic, salt and pepper in bowl.
11Place artichokes upright in baking dish and pour consomme mixture evenly over top.
12Bake until outer leaves begin to turn copper color, 25-35 mins.
13Baste and broil until tops brown, 3 mins.
14Serve in soup plates with remaining liquid.
