Ingredients:
1 1/2 cupChick peas, cooked & drained
1 eachOnion, chopped
1/4 cupParsley, chopped
3 eachGarlic cloves, crushed
1 tbspChick pea stock
1/2 tspBaking soda
1 tspCoriander
1 tspCumin
Salt & pepper
1 tbspAll-purpose flour, plus
-- additional flour for
-- coating patties
Oil for frying
Pitas, tops cut off
Tomato & onion salad
1 dashHarissa, see below, optional
HARISSA
1/2 lbsRed chilis, stemmed, seeded
-- & chopped
6 eachGarlic cloves, peeled
1 tspCaraway seeds
1 tspSalt
1 1/2 tspPepper
1 1/2 tspCumin
1 tspCoriander
Olive oil
Procedures:
1Place cooked chick peas in a blender.
2Add onion, parsley, garlic, stock, soda, spices, salt & pepper.
3Process until smooth.
4Place in a glass bowl & refrigerate until firm, 20 to 30 minutes.
5Shape into 12 patties.
6Dust lightly with flour & fry in hot oil, turning frequently until browned & crisp.
7Drain on paper towels.
8Put a pattie in a pita pocket, top with salad & a little harissa if desired.
9Harissa: place peppers & garlic in a processor & process until coarsely ground.
10Add remaining ingredients except the olive oil & process until smooth.
11To store, place in a small jar, top with a thinlayer of olive oil & refrigerate till ready to use.
12Makes 1 cup.
