Ingredients:

Ripe plum tomatoes

Leaves fresh basil

Chopped fresh parsley

Extra-virgin olive oil
Salt and pepper to taste

Crusty italian rolls

Garlic, cut in half
Procedures:

Finely chop the tomatoes and basil.

Mix them in a bowl with parsley and olive oil.

Season with salt and pepper, to taste.

Cut the rolls in half.

Toast them under a hot broiler for a few minutes, until nicely golden.

Remove from oven, and rub the toasted side generously with the cut side of the garlic clove.

Top each piece with a portion of the tomato mixture and serve immediately
