Ingredients:
1 1/2 lbsTomatoes, skinned
1 tbspLemon juice
1/2 pintVegetable stock
Salt & pepper
1 smallOnion, finely chopped
1 each4" piece cucumber, chopped
1 eachYellow bell pepper, julienne
2 eachPeaches, thinly sliced
1 eachApple, thinly sliced
4 tbspBlackberries, -=OR=- other
-- soft fruit
3 tbspParsley, chopped
Procedures:
1Blend the tomatoes & lemon juice until smooth.
2Stir in the stock & season with salt & pepper.
3Stir in the remaining vegetables & fruits.
4Cover & chill for at least 1 hour to allow the flavours to blend.
5Just before serving, stir in the parsley.
6Serve with oatcakes.
