Ingredients:
1 1/2 lbsYam cut into small pieces
1 tspSalt
1 tspMsg
2 tbspSugar (gula melaka
-preferred)
2 tbspSoftened butter
2 tbspTapioca flour
Stuffing Ingredients
4 ozPrawns
4 ozMeat, minced
3 smallOnions chopped
2 ozFrozen green peas
1 Spring onion chopped
2 Mushrooms diced
1/2 tspSalt
1/2 tspMsg
1 tspSugar
1/2 tspSoy sauce
1/2 tspOyster sauce
1/2 tbspCornflour in 3 T water
2 tbspCooking oil
Procedures:
1Puff ingredients Steam yam until cooked.
2Remove and mash.
3Leave to cool.
4Heat cooking oil in pan.
5Add prawns and meat and stir for 1 minute.
6Add onions, spring onion and mushrooms and stir for another minute.
7Add salt, msg, sugar, soya sauce, oyster sauce and cornflour mixture.
8Stir well.
9Add in green peas and stir.
10Remove and cool.
11Put puff ingredients in a bowl and mix well.
12Knead thoroughly.
13Divide into 20-25 portions.
14Roll each portion into a ball and flatten.
15Put 1 t stuffing in centre of dough.
16Moisten edges, fold over and seal.
17Heat cooking oil for deep frying.
18Deep fry until golden brown. serve hot
