Ingredients:
2 cupBoiling water
1 1/2 cupHalved walnuts
1/2 cupSugar
1 cupVegetable oil
Procedures:
1Pour boiling water over nuts and let stand 2 to 3 minutes.
2Drain well.
3Transfer to baking sheet.
4Sprinkle with sugar and mix well.
5Spread in single layer and let stand overnight to dry.
6Heat oil in wok or skillet until very hot.
7Add nuts in small batches and fry until golden brown, 1 to 2 minutes; watch carefully because they can burn quickly.
8Drain on rack.
9Store in tightly covered container in cool, dry place.
10(oil can be strained and used several more times for this recipe).
