Ingredients:
| 1/2
| lbs | Any small filled pasta | | | Oil for frying | | 1/3
| cup | Parmesan | | 1
| tsp | Dried basil | | 1/8
| tsp | Cayenne | | | Garlic salt |

Procedures:
| 1 | If pasta doesn"t feel moist and supple, cover with boiling water and let stand until softened, 5 minutes. | | 2 | Drain. | | 3 | Spread soaked pasta on a 10x15" baking pan lined with paper towels. | | 4 | Blot pasta gently and let dry 5 minutes. | | 5 | If pasta feels moist, omit saoking and drying step. | | 6 | Meanwhile, place 1/3 of the pasta in a skillet with heated oil. | | 7 | Cook, turning occasionally, until golden and crisp, 2-3 minutes. | | 8 | Remove with slotted spoon and drain. | | 9 | Serve or keep warm in a 200°F oven up to 30 minutes while frying remaining pasta. | | 10 | In a bag, mix cheese, basil, cayenne, and garlic salt to taste. | | 11 | Add warm pasta and shake to coat. | | 12 | Pour into bowl. | | 13 | Offer pasta with cocktail sauce for dipping. | | 14 | Makes 60-80 appetizers, 10-12 servings |
