Ingredients:
1/2 lbsAny small filled pasta
Oil for frying
1/3 cupParmesan
1 tspDried basil
1/8 tspCayenne
Garlic salt
Procedures:
1If pasta doesn"t feel moist and supple, cover with boiling water and let stand until softened, 5 minutes.
2Drain.
3Spread soaked pasta on a 10x15" baking pan lined with paper towels.
4Blot pasta gently and let dry 5 minutes.
5If pasta feels moist, omit saoking and drying step.
6Meanwhile, place 1/3 of the pasta in a skillet with heated oil.
7Cook, turning occasionally, until golden and crisp, 2-3 minutes.
8Remove with slotted spoon and drain.
9Serve or keep warm in a 200°F oven up to 30 minutes while frying remaining pasta.
10In a bag, mix cheese, basil, cayenne, and garlic salt to taste.
11Add warm pasta and shake to coat.
12Pour into bowl.
13Offer pasta with cocktail sauce for dipping.
14Makes 60-80 appetizers, 10-12 servings
