Ingredients:
1 lbsBeef liver, sliced ?thick
1/3 cupAll-purpose flour
1 tspSalt
1/8 tspPepper
2 lbsShortening
FIESTA SOUR CREAM DIP
1 cupSour cream
1/2 tspCurry powder
1 tspParsley, chopped
1/4 tspHot pepper sauce
1/2 tspSalt
Procedures:
1Cut liver into strips about ?inch wide and 3 inches long.
2Combine flour, salt, and pepper.
3Dredge lvier strips in seasoned flour.
4Fry in shortening at 350 degrees until brown, about 2 to 3 minutes.
5Drain on absorbent paper.
6Serve hot or cold with fiesta sour cream dip.
7Fiesta sour cream dip: combine sour cream, curry powder, parsley, hot sauce and salt.
8Mix well.
9Refrigerate until ready to serve.
10Yield: about 1-?cups.
