| cup | All-purpose flour | | 1
| tsp | Salt | | 1/8
| tsp | Pepper | | 2
| lbs | Shortening | | | FIESTA SOUR CREAM DIP | | 1
| cup | Sour cream | | 1/2
| tsp | Curry powder | | 1
| tsp | Parsley, chopped | | 1/4
| tsp | Hot pepper sauce | | 1/2
| tsp | Salt |

Procedures:
| 1 | Cut liver into strips about ?inch wide and 3 inches long. | | 2 | Combine flour, salt, and pepper. | | 3 | Dredge lvier strips in seasoned flour. | | 4 | Fry in shortening at 350 degrees until brown, about 2 to 3 minutes. | | 5 | Drain on absorbent paper. | | 6 | Serve hot or cold with fiesta sour cream dip. | | 7 | Fiesta sour cream dip: combine sour cream, curry powder, parsley, hot sauce and salt. | | 8 | Mix well. | | 9 | Refrigerate until ready to serve. | | 10 | Yield: about 1-?cups. |
