Ingredients:
2 tspCanola oil
1 lbsChicken pieces, skinned
-boned
1/2 Onion, chopped
1 Garlic clove, minced
1 lbsFresh or 12 ounces canned
-tomatillos
3 Whole roasted green chilies
-chopped
1/2 cupApple juice
1 tbspFresh chopped cilantro
Procedures:
1Spray a non-stick skillet with vegetable cooking spray.
2Heat oil and saute chicken.
3Add onion and garlic, stirring until limp.
4Add remaining ingredients.
5Reduce heat, cover, and simmer about 15 minutes
