Ingredients:
1 Chicken (2 ? to 3-lb)
- cut up
1 tspDried oregano, crushed
1 tbspGarlic salt
1 tspBlack pepper
2 tbspRed wine vinegar
1 bunchCilantro, leaves only
1 medOnion, quartered
2 medTomatoes, quartered
1 Green bell pepper, seeded
- and chopped
1 Yellow chile, seeded
2 tbspOil
1 medOnion, chopped
Paprika
Procedures:
1Marinate chicken in mixture of oregano, garlic salt, pepper and vinegar.
2Meanwhile, combine cilantro, onion, tomatoes, green pepper and chile in blender and blend until smooth.
3Set aside.
4Heat oil in skillet, add onion and season to taste with paprika.
5Cook until onion is tender and golden.
6Add cilantro sauce and cook 2 minutes.
7Add chicken pieces and water to cover and cook until chicken is tender, about 45 to 55 minutes
