Basic green sauce

Ingredients:
1 cupOnions, Chopped
1/2 cupVegetable Oil
10 ozFresh Spinach, Chopped
1/2 lbsTomatillos, Coarsely Chopped
4 ozDiced Green Chiles
2 Cloves Garlic, Crushed
1 tbspOregano Leaves, Dried
1 cupChicken Broth
2 cupDairy Sour Cream
Procedures:
1Cook and stir onions in oil in a 3-quart saucepan until tender.
2Stir in remaining ingredients except broth and sour cream.
3Cover and cook over medium heat for 5 minutes, stirring occasionally.
4Place mixture in food processor workbowl fitted with steel blade or in a blender container; cover and process until smooth, about 1 minute.
5Return mixture to saucepan; stir in broth.
6Heat to boiling; reduce heat.
7Simmer uncovered for 10 minutes.
8Stir in sour cream.
9Cover and refrigerate any remaining sauce.
10Makes about 4 cups of sauce
