Ingredients:
1 largeEgg, separated
1 largeEgg white
Ds Salt
1 Canned whole small green
-chili, drained
3/4 ozShredded cheddar cheese
Hot or medium salsa (opt)
Procedures:
1Preheat oven to 350°F.
2Spray 6" au gratin dish with nonstick spray.
3Set aside.
4In a medium bowl, with electric mixer on high speed, beat egg white and salt until stiff.
5In a small bowl, lightly beat egg yolk; fold into egg whites.
6Spread half the mixture in prepared dish.
7Open chile and place flat on top; sprinkle with cheese.
8Spread remaining egg mixture on top to make an even layer.
9Bake until golden brown and center is set; 15-20 minutes.
10Serve with salsa if desired.
