Ingredients:
7 Eggs
2 tbspSkim milk
1 tbspChicken stock
1 cupCorn
1/4 tspChili powder
4 Corn tortillas
1 Sweet red pepper rings
1 Parsley sprigs
Procedures:
1Beat the eggs, whisk in milk.
2Heat stock in large skillet and add the corn.
3Cook 2 to 3 minutes.
4Stir in the eggs and sprinkle with chili powder.
5Cook over low-medium heat, stirring occasionally, until the eggs are set.
6Place one-fourth of mixture on each tortilla.
7Serve garnished with pepper rings and parsley sprigs, if desired
