Arroz con pollo

Ingredients:
1/2 cupOlive oil
1 Frying chicken cut up
1 Small onion chopped
1 Clove garlic, minced
Salt and pepper to taste
1/4 cupTomato sauce
1/8 tspSaffron (powdered)
2 1/2 cupChicken broth
1 cupUncooked rice
Procedures:
1Heat oil, brown chicken on both sides.
2Add onion and garlic, fry a few minutes, then add tomato sauce, saffron dissolved in chicken broth, salt and pepper.
3Cover and cook for 20 minutes.
4Add rice, stir well, cover again and simmer for 30 minutes longer, or until all liquid has been absorbed and chicken is tender
