Ingredients:
3/4 cupSour cream (regular, light
-or non-fat)
2 tbspTaco seasoning mix
6 Eggs
6 Flour (8-inch) tortillas
-heated
3/4 cupShredded Cheddar cheese
1 cupShredded romaine lettuce
1 medRipe tomato, seeded, chopped
Procedures:
1In small bowl stir together sour cream and taco seasoning mix; set aside.
2In medium bowl whisk eggs with 2 tablespoons water until well-beaten.
3Pour eggs into 10-inch skillet sprayed with no-stick cooking spray.
4Cook over medium low heat, stirring occasionally, until eggs are set (3-5 minutes).
5To assemble burritos, spread about 2 tablespoons sour cream mixture over each warm tortilla.
6Top with 1/6 eggs, cheese, lettuce and tomato.
7Roll up tightly; serve warm.
8Makes 6 servings.
