Ingredients:
6 Zucchini blossoms
1/2 tspButter or margarine
1 7-inch flour tortilla
3 tbspShredded Jack cheese
1/2 tspGrated Parmesan cheese
3 Thin avocado slices
Salsa to taste
Procedures:
1Rinse blossoms well, checking for insects.
2Melt butter over medium heat.
3Add blossoms and cook, turning often, until wilted, 3-4 minutes.
4Remove from pan.
5Lay tortilla flat in pan and put blossoms on half the tortilla.
6Sprinkle with cheese.
7Cook until cheese melts.
8Lay avocado slices on cheese, fold tortilla over filling.
9Slide onto a plate and accompany with salsa
