| each | Bacon slices, diced | | 1/2
| cup | Chopped onion | | 7
| oz | Chopped green chilies | | | -drained | | 4
| tbsp | Unsalted butter, room | | | -temperature | | 1/2

Procedures:
| 1 | In large pot of boiling salted water, cook potatoes and garlic until tender, about 20 minutes. | | 2 | In medium skillet over medium heat, saute bacon until crisp. | | 3 | Drain bacon on paper towels. | | 4 | Remove all but 2 tsp. bacon drippings from pan. | | 5 | Saute onion until softened, stir in green chilies, and cook 1 minute more; set aside. | | 6 | Drain potatoes and discard garlic. | | 7 | Force potatoes through a potato ricer or mash with a potato masher. | | 8 | Beat in butter. | | 9 | Beat in cream and cheese. | | 10 | Season with salt and pepper. | | 11 | Fold in green chili mixture and bacon. | | 12 | Spoon into serving bowl and serve immediately. | | 13 | Makes 4 to 6 servings. |
