White cheddar & green chili mashed potatoes from live!/re

Ingredients:
2 lbsPotatoes, peeled and cut
-into chunk
2 eachCloves garlic, peeled and
-sliced
2 eachBacon slices, diced
1/2 cupChopped onion
7 ozChopped green chilies
-drained
4 tbspUnsalted butter, room
-temperature
1/2 cupHeavy cream or milk, warmed

4 ozGrated white cheddar cheese
- or pep
1 eachSalt and freshly ground
-pepper, to
Procedures:
1In large pot of boiling salted water, cook potatoes and garlic until tender, about 20 minutes.
2In medium skillet over medium heat, saute bacon until crisp.
3Drain bacon on paper towels.
4Remove all but 2 tsp. bacon drippings from pan.
5Saute onion until softened, stir in green chilies, and cook 1 minute more; set aside.
6Drain potatoes and discard garlic.
7Force potatoes through a potato ricer or mash with a potato masher.
8Beat in butter.
9Beat in cream and cheese.
10Season with salt and pepper.
11Fold in green chili mixture and bacon.
12Spoon into serving bowl and serve immediately.
13Makes 4 to 6 servings.
