Ingredients:
2 tbspOlive oil
1 cupWhite rice
1/4 cupOnions, chopped
2 Pablano chillies, roasted
-- peeled, deseeded &
-- chopped
6 Green onions, thinly sliced
1 Garlic clove, minced
1/4 tspSalt
1/4 tspCumin
1 3/4 cupVegetable broth
1/3 cupCilantro, coarsely chopped
Procedures:
1Preheat oven to 375°F.
2Heat oil in a wok over medium heat until hot.
3Add rice & cook, stirring, for 2 minutes or until rice turns opaque.
4Add the onions, cook and stir for 1 minute.
5Stir in green onions, garlic, salt & cumin; cook & stir for 20 seconds.
6Stir in broth & bring to a boil over high heat.
7Lower the heat & simmer, covered, for 15 minutes or until the rice is almost tender.
8Remove skillet from heat & transfer to greased 1 ?qt. baking dish.
9Bake uncovered for 15 minutes or until the rice is tender.
10Garnish with cilantro & serve hot
