Ingredients:
1 pack(7 ounces) dried
-Cheese-filled tortellini
2 1/4 cupWater
2 tbspRice wine vinegar or
-White wine vinegar
2 tbspSoy sauce
1 can(10-?ounces) condensed
-Chicken broth
2 tbspFinely chopped
-Gingerroot or 1 To 2 ts
-Ground ginger
2 cupSliced bok choy
2 cupCut-up cooked turkey
-(about 10 ounces)
2 Green onions (with tops), sl
1 cupEnoki mushrooms
Procedures:
1Cook tortellini as directed on package; drain.
2Heat water, vinegar, soy sauce, chicken broth and gingerroot to boiling in 3-quart saucepan; reduce heat.
3Stir in bok choy stems (reserve leaves), turkey and onions.
4Simmer 15 minutes.
5Stir in bok choy leaves and mushrooms.
6Simmer just until leaves are wilted.
