Ingredients:

| tsp | Cayenne pepper | | 1
| tsp | Salt | | 2 1/2
| cup | Flour | | 8
| oz | Cheddar cheese, grated | | 1/2
| lbs | Butter (2 sticks) unsalted- | | | At room temperature | | 1
| cup | Pecans, chopped fine |

Procedures:
| 1 | Sift cayenne, salt, and flour together. | | 2 | In a separate bowl, cream butter and cheese together. | | 3 | Gradually add flour mixture and mix thoroughly. | | 4 | Add pecans. | | 5 | Divide dough in half. | | 6 | Roll into logs, 1 ?inches x 8 inches. | | 7 | Wrap each log in plastic wrap and refrigerate for up to two weeks or freeze for up to 6 months. | | 8 | To serve: preheat oven to 350 deg f. | | 9 | Grease baking sheets. | | 10 | With a sharp knife, cut logs into ? thick slices. | | 11 | Arrange slices on baking sheets about ?apart. | | 12 | Bake for 15 to 20 minutes or until light golden brown. | | 13 | Remove from sheets and cool completely. | | 14 | Store in airtight containers. | | 15 | Good when served with soups or as hors d"oeuvres |
