Ingredients:
1 xBasic Potato Skins recipe
1 tspDijon or spicy mustard
1/4 lbsThinly sliced ham
2 ozRoasted red peppers -or-
2 ozWhole pimentos
1/2 cupMonterey Jack cheese shreds
1 xChopped parsley (optional)
Procedures:
1Preheat oven to 400 degrees.
2Follow the recipe for basic crispy potato skins.?brush insides of potato skins with mustard.
3Drain and slice peppers or pimientos.
4Top with slices of ham and a few strips of pepper/pimiento.
5Sprinkle with cheese.?bake about 10 minutes on baking sheet, or until cheese is melted and bubbling.
6Sprinkle with parsley if you like.?makes about 2 skins per serving
