Grilled shiitake mushrooms on arugula

Ingredients:
12 ea Shiitake mushrooms
4 tspRoasted sesame seeds
SEASONING SAUCE
2 tbspSoy sauce
2 tbspOriental sesame oil
2 tbspOlive oil
2 tspSugar
1 bn Arugula, stems removed
Procedures:
1Prepare the seasoning sauce by combining the soy sauce, sesame oil, olive oil, and sugar.
2Can be prepared up to a week ahead.
3Preheat the broiler.
4Wash the arugula and spin dry.
5Clean the mushrooms and remove the stems.
6Place them cup side up on a broiling rack.
7Brush the seasoning sauce on the mushroom caps.
8Position the rack 4-6 inches from the heat and broil until the mushrooms look brown and crusty, 2-3 minutes.
9They cook very quickly, so keep an eye on them.
10Immediately place the mushrooms on top of the arugula.
11Pour the small amount of seasoning sauce that"s left in the pan over the arugula.
12Sprinkle with the roasted sesame seeds and serve.
