Ingredients:
SALAD
1 eachRomaine lettuce, torn
1 eachScallion, chopped
1/2 eachGreen bell pepper, diced
1 eachCelery stalk
1 eachGranny Smith apple, diced
1/4 cupWalnuts, toasted
DRESSING
2 largeRipe tomatoes
1/8 cupAlmonds, toasted
2 tbspLemon juice
1 tbspOlive oil
1 tspHungarian paprika
Salt & pepper
Procedures:
1Combine salad ingredients in a large salad bowl.
2Set aside.
3Wash tomatoes & place in a blender or food processor.
4Process until smooth.
5Add the remaining ingredients & process until the almonds are smooth & the rest of the ingredients have been well blended.
6Check the seasoning.
7Place in a glass jar & refrigerate until ready to serve.
8Toss prepared salad with dressing.
9You may not need to use it all.
10Serve with lots of fresh italian home-made bread for a refreshing main dish salad in the summer.
11Variation: substitute pine nuts for the walnuts in the salad.
12Add a couple of mushrooms if so desired
