Ingredients:

| med | Tomatoes, peeled & coarsely | | | -- chopped | | 3

| tsp | Oregano | | 1
| tsp | Fresh mint, chopped | | 1
| tsp | Salt | | 1/4
| tsp | Pepper | | 3
| tbsp | Olive oil | | 5
| tbsp | Lemon juice |

Procedures:
| 1 | Cook eggplants in their skins. | | 2 | Peel them or scoop out the insides. | | 3 | Mix the pulp with the tomatoes, galric, herbs, salt & pepper. | | 4 | Put into blender. | | 5 | Add oil a little at a time, blending at low speed. | | 6 | Add lemon juice & vinegar & blend at a higher speed till smooth. | | 7 | Serve with pita. | | 8 | Vera gewanter, "a passion for vegetables |
