| tbsp | Orange peel, grated | | 3/4
| cup | Orange juice | | 2 1/2
| tbsp | Maple syrup | | 1
| tsp | Cornstarch, mixed with | | 1
| tbsp | Water | | | Salt & pepper, to taste | | | GARNISH | | | Minced parsley | | | Cilantro | | | FOR SERVING | | | Cooked brown or white rice |

Procedures:
| 1 | Broccoli cole slaw is available in plastic bags in the produce section; it contains shredded broccoli, red cabbage and carrots. | | 2 | In a 10 to 12 inch skillet, stir the curry powder over medium heat until it smells toasted, about 2 minutes. | | 3 | Add broccoli slaw, orange peel, orange juice and maple syrup. | | 4 | Boil over high heat for about 8 minutes, or until vegetables are cooked tender-crisp, stirring frequently. | | 5 | Stir cornstarch mixture and add to vegetables. | | 6 | Stir until boiling. | | 7 | Add salt and pepper to taste. | | 8 | Serve hot over cooked rice. | | 9 | Garnish with chopped parsley or cilantro, if desired. | | 10 | Can be prepared in advance, refrigerated and served cold as a salad |
