Ingredients:
1 tspCurry powder
1 lbsBroccoli slaw
1 tbspOrange peel, grated
3/4 cupOrange juice
2 1/2 tbspMaple syrup
1 tspCornstarch, mixed with
1 tbspWater
Salt & pepper, to taste
GARNISH
Minced parsley
Cilantro
FOR SERVING
Cooked brown or white rice
Procedures:
1Broccoli cole slaw is available in plastic bags in the produce section; it contains shredded broccoli, red cabbage and carrots.
2In a 10 to 12 inch skillet, stir the curry powder over medium heat until it smells toasted, about 2 minutes.
3Add broccoli slaw, orange peel, orange juice and maple syrup.
4Boil over high heat for about 8 minutes, or until vegetables are cooked tender-crisp, stirring frequently.
5Stir cornstarch mixture and add to vegetables.
6Stir until boiling.
7Add salt and pepper to taste.
8Serve hot over cooked rice.
9Garnish with chopped parsley or cilantro, if desired.
10Can be prepared in advance, refrigerated and served cold as a salad
