Ingredients:
PICKLE A
3 cupCucumbers, thinly sliced
1/3 cupOnion, chopped
1/2 cupRed wine vinegar
2 tspSugar
1/4 tspSalt
4 eachRed chili peppers, seeded
1 tbspCilantro leaves
PICKLE B
3 cupCucumbers, sliced thinly
1/2 smallOnion, sliced thinly
A MIXTURE
2 eachRed chili peppers, seeded
2 tspGarlic, chopped
2 tspCilantro root, chopped
2 tspPeppercorns, whole or ground
B MIXTURE
1/2 cupVinegar
2 tbspSoy sauce
1 1/2 tspSugar
1 tbspCilantro leaves, chopped
1/2 cupPeanuts, crushed
Procedures:
1Pickle a: combine all ingredients & serve.
2Pickle b: place cucumber & onion in a bowl & toss.
3Place a mixture in a blender or food processor & blend to make a rough paste.
4Blend the b mixture, then mix together a & b.
5Immediately pour over the cucumbers & sliced onion.
6Place in a serving dish & sprinkle with the cilantro leaves & crushed peanuts.
7Serve immediately.
8To make it hotter add more red pepper or a shake or two of cayenne
