Cucumber & fennel with orange-mint dressing

Ingredients:
SALAD
1 eachCucumber, peeled, halved
-- seeded & diced
1 smallFennel bulb, trimmed &
-- finely slivered
1 eachGranny Smith apple, cored
-- quartered & sliced
2 tspLemon juice
2 tbspWalnuts, chopped & toasted
VINAIGRETTE
2 tbspOrange juice
2 tbspWalnut oil
1 tbspFresh mint
1 tbspCilantro, chopped
1/8 tspPaprika, sweet or hot
Salt & pepper
Procedures:
1Salad: combine salad ingredients, except walnuts, in a serving bowl & gently mix.
2Vinaigrette: in a small bowl, whisk all ingredients until emulsified.
3Season with salt & pepper & pour over salad.
4Serve immediately or marinate, covered, in the fridge for 1 to 2 hours.
5Toss before serving & garnish with toasted nuts.
