Ingredients:

| each | Granny Smith apple, cored | | | -- quartered & sliced | | 2
| tsp | Lemon juice | | 2
| tbsp | Walnuts, chopped & toasted | | | VINAIGRETTE | | 2
| tbsp | Orange juice | | 2
| tbsp | Walnut oil | | 1
| tbsp | Fresh mint | | 1
| tbsp | Cilantro, chopped | | 1/8
| tsp | Paprika, sweet or hot | | | Salt & pepper |

Procedures:
| 1 | Salad: combine salad ingredients, except walnuts, in a serving bowl & gently mix. | | 2 | Vinaigrette: in a small bowl, whisk all ingredients until emulsified. | | 3 | Season with salt & pepper & pour over salad. | | 4 | Serve immediately or marinate, covered, in the fridge for 1 to 2 hours. | | 5 | Toss before serving & garnish with toasted nuts. | | 6 | Yamuna devi, "yamuna"s table |
