Crispy bean curd cubes with peanut dipping sa

Ingredients:
3/4 lbsBean curd (tofu)
- cut into 1-inch cubes
1 1/4 cupPeanut oil, for deep-frying
SAUCE
1 ozRoasted peanuts
1 tbspSugar
2 tbspWater
2 tspChinese white rice vinegar
-OR- cider vinegar
1 tbspFinely chopped cilantro
1/2 tspSalt
1/2 tspChili oil
Procedures:
1Combine the sauce ingredients together in a small bowl and set aside.
2Heat the 1 ?cups oil in a deep-fat fryer or a large wok until it almost smokes.
3Deep-fry the bean curd cubes in two batches.
4When each batch of bean curd cubes is lightly browned, remove and drain well on paper towel.
5Arrange the bean curd cubes on a platter and serve the peanut sauce separately as a dipping sauce.
